Meal Planning

Seriously, I am not like allot of people who plan meals two weeks in advance, with lists and schedules.  I am too much of a free bird  to make it so complicated.  If that is what you do, I admire you... but if you are like me, I think about what I want to make in the morning, so I can get ingredients out of the freezer, or get a little something fresh from the farmer's market.
It is when I purchase my groceries that I think about stocking my shelves with possibilities.  I may pick up chicken breasts, knowing only that I will make something from them, whether they get grilled up, or turned into enchiladas.  So, I make sure I have lots of things to pick from.  Having canned pinto beans, (see recipe for hurry up refried beans) and things like el pato sauce, plenty of garlic, and always corn tortillas, or things like coconut milk, pasta, rice, well, you follow me.  I can make anything my husband may say he is in the mood for.  I do my shopping every two weeks, with the occasional trip out to get fresh veggies and fruits.  See Pantry tab for things I always keep on hand to make a simple but fabulous meal.
